Gallo Pinto Recipe

Ingredients:

  • 2 cups cooked white rice, preferably day-old
  • 1 cup cooked black beans, with some liquid reserved
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Salsa Lizano or Worcestershire sauce, for serving (optional)

Instructions:

  1. In a large skillet or frying pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and red bell pepper to the pan. Sauté until the vegetables become tender and lightly golden.
  3. Add the minced garlic to the pan and cook for another minute until fragrant.
  4. Stir in the ground cumin, paprika, and dried oregano, coating the vegetables with the aromatic spices.
  5. Add the cooked black beans (with some of the reserved liquid) to the pan. Mix well with the seasoned vegetables.
  6. Gently fold in the cooked white rice, ensuring that it is evenly distributed throughout the pan.
  7. Season the Gallo Pinto with salt and black pepper to taste. Stir gently to combine all the ingredients.
  8. Cook the Gallo Pinto for a few more minutes, allowing the flavors to meld together.
